Tea is much more than a hot or iced beverage. It is so versatile and makes a wonderful ingredient to cook with or make cocktails. The Pleasures of Tea has a core selection of books that contain recipes using tea, but we've created a few recipes of our own using our favorite ingredient. Cocktails Apricot Mar-tea-ni 1 part Vodka2 parts Sencha Japanese Green Tea, prepared strong and allowed to cool2 parts Apricot NectarCombine ingredients in a cocktail shaker with ice. Shake until chilled and strain into a martini glass. Garnish with half of a fresh apricot or a slice of lime. Main Dishes Citron-Ginger Glazed Chicken 1/2 cup Citron Korean-Style Tea in a Jar1/4 cup Ginger Korean-Style Tea in a Jar4 Chicken Breasts1 Tbsp Olive OilPinch SaltPreheat oven to 350 degrees. Combine Citron and Ginger Korean-Style Tea in a bowl, stir, and set aside. Clean chicken breasts and trim away any fat. Heat olive oil in a skillet over medium-high heat. Add chicken breasts, lightly salt, and sear each side for approximately 2 minutes. Place chicken breasts in a shallow baking dish and pour Korean-Style Tea mixture to cover each piece. Bake for approximately 15 minutes or until cooked through. Remove from oven and arrange chicken on a serving dish.
