Yellow teas are similar to Green Teas in that they are non-oxidized, have less caffeine than Black Tea, and are good for multiple infusions. Yellow tea differs from green tea in that there is an extra processing step. During this step, the leaves are slowly and lightly steamed and then covered with a cloth for a period of time, allowing the leaves to seal in their aromas. Because of this extra step, yellow tea is rare.
