Alishan Jin Xuan GABA Organic Formosa Green is from Chiayi County in the center of the island of Taiwan. Produced from the Jin Xuan cultivar, the plants grow in ample sunshine in the subtropical climate deep in the mountains at an elevation of 3,300 feet and are shade-grown during the ten days prior to harvest. After harvest, the leaves are allowed to rest for about eight hours in a stainless steel vacuum drum in which the oxygen has been removed and replaced with nitrogen. This environment greatly increases the amount of naturally occurring GABA (gamma-Aminobutyric acid), a neurotransmitter that is believed to promote relaxation and reduce anxiety. The leaves are then lightly oxidized about 5% and rolled.
The leaves unfurl to yield an infusion that is very smooth, viscous and light-bodied with a brothy, sweet and umami taste and savory, rich, vegetal, and grassy aromas.
