Tie Guan Yin, also known as Iron Goddess of Mercy, is a medium oxidized (30%-40%) amber oolong from Anxi County, Fujian Province, China that is grown at an altitude between 1,300 and 1,900 feet.

The name of the tea is steeped in legend of divine origin.

A poor farmer restored and maintained a dilapidated temple to the bodhisattva of compassion, Guan Yin.  To show her appreciation for his dedication, Quan Yin appeared to him in a dream one night and told him that there was a gift for him in the fields around the temple.  The next morning he looked for his gift and found a lone tea plant.  He nurtured the plant and named the tea it produced "Tie Guan Yin", after the bodhisattva.

There are many different styles of Tie Guan Yin and this one is more traditional. The loosely rolled leaves yield a strong, yet delicate, smooth, medium-bodied infusion that has fruity and floral aromas and flavors with mineral and toasty notes.

Leaves can be infused multiple times - until the leaves have completely unfurled and released all of their flavors.
