Songboling Estate Ruby Isle Organic is a very rare white tea. This organic garden is located at an elevation about 1,300 feet in Mingjian Township in Nantou County, Taiwan. The two-leaves-and-a-bud pluck are hand-harvested from the Si Ji Chun (Four Seasons Spring) cultivar of Camellia sinensis sinensis, which is mainly used for producing wulong teas. The leaves are hand-processed in a style that was common prior to 1915, but has been rarely used until its recent comeback. The leaves are allowed to undergo varying levels of natural oxidation up to 65%.
Beautiful, multi-colored leaves and buds yield a sweet, smooth, and thick, light- to medium-bodied infusion with fruity, fresh, and grassy notes, reminiscent of newly fallen leaves.
